Blue cheese and well-marbled beef are a classic match: the sharp, salty tang stands up to all that richness. This version takes ten minutes and one small pan.

Time 10 min  ·  Makes about 1 cup  ·  Skill Easy

Ingredients

  • 1 tbsp butter
  • 1 small shallot or 1 garlic clove, minced
  • ¾ cup heavy cream
  • 3 oz blue cheese, crumbled
  • Black pepper and chopped chives

Method

  1. Melt the butter in a small saucepan over medium-low heat and cook the shallot for 1 minute.
  2. Add the cream and simmer gently for 3 to 4 minutes until slightly thickened.
  3. Take the pan off the heat and stir in the blue cheese until mostly melted. Leave a few crumbles whole for texture.
  4. Season with black pepper and finish with chives.

Best with

Ribeye, New York Strip and Ground Beef burgers.

Ranch tip

Add the cheese off the heat. Boiling blue cheese makes the sauce grainy. Taste before salting; the cheese brings plenty.
